Best thing about nettle is that you can incorporate it into most of your favourite foods! Avo toasts are delicious with nettle pesto and have better nutricional values with nettle’s proteins, iron and vitamins coming into play. For the pesto you need 1 litre of washed young nettle leaves. Boil for 10 secs and rinse quickly with cold water. Alternatively you can use dried nettle. Roast 1 dl of pine kernels. Mix nettles, pine kernels, 2 garlic cloves, 2 dl olive oil, 1 dl shredded parmigiana and 1 tbs of lemon juice in a blender.
